  • 12 Eggs (Hard Cooked)
  • 1 (10 ounce) package of frozen chopped Spinach or 1 bunch of fresh Spinach (cooked and chopped)
  • ¼ cup Mayonnaise
  • 2 cups Cabbage (Gobhi) (Shredded)
  • 2 tbsp. Parmesan Cheese (freshly grated)
  • Salt (to taste)
  • Black Pepper (Pisi Kaali Mirch) (freshly ground - to taste)
  • 2 tbsp. Olive Oil (Zaitoon Ka Tail)


  1. Cook the spinach. Drain and squeeze dry, getting out as much water as possible so spinach doesn't dilute the filling.
  2. Peel eggs and cut in half. Mash yolks with spinach, mayonnaise, oil, cheese, salt and pepper. Carefully fill each egg white half with the yolk mixture. Cover with plastic wrap and refrigerate until well chilled.
Yield: 6 Servings
