  • 2 cups of Semolina (Sooji)
  • 1 can of Sweetened Condensed Milk
  • 1 1/2 cup of Ghee or Oil
  • 5 cups of Water
  • 15-20 Almonds (Baadaam) (sliced lengthwise)
  • 2 tbsp. of Raisins (Kishmish)
  • 3-5 Saffron Strands (Zafran) (soaked in 1 tbsp. of water)
  • 3-5 more Almonds (Baadaam) (sliced) (for garnish)
  • Edible Silver Foil (Chandi Ka Warkh) (optional - for decorating)


1) Heat ghee or oil in a heavy bottomed pan. Fry the almonds and raisins in it until lightly browned. Remove from ghee. And set aside.

2) Add semolina (sooji) to the ghee or oil. Fry until it is lightly golden in color. Add the soaked saffron strands and 4 cups of water. Stir continuously. Lower the flame, keep stirring, until all of the water is absorbed.

3) Add the milk and stir until you see a little ghee or oil come up on the sides of the pan. Add the fried almonds and raisins. Mix well. And remove from heat.

4) Spread the mixture onto a flat, greased plate. Cut into squares or diamond shapes. Decorate each square with sliced almonds. If desired, you can also spread some edible silver foil over the barfi before cutting it into shapes.
