Rhubarb Sauce with Honey & Ginger

4 cups ofcut Rhubarb, 1/3 cup water, 1/2 cup sugar, 1/3 cuphoney, 1 Tbs grated fresh ginger, 1/4 Tsp ground cloves Put all the ingredients into a large sauce pan. Bring to a boil and cover. Reduce the heat to a simmer and cook about 10 - 15 minutes, until the Rhubarb has fallen apart and the sauce has thickened. Stir occasionally. The sauce can be left chunky or pureed in a food processor to a smooth consistency. Chill. Good ove ice cream.
Sweet & Sour Rhubarb Sauce

1 Medium onion chopped, 1 Tbs Butter or Margarine, 2 cups Rhubarb, 1/2 cup chopped tomatoes, 1/4 cup brown sugar, 1/2 Tsp dried crushed Rosemary, 1/4 Tsp salt, 1 Tsp lemon juice In medium sauce pan cook onions in butter until brown, about 7 minutes. Stir in everything else except lemon juice. Bring to boil. Cook over medium heat about 15 minutes. Remove from heat and stir in lemon juice. Serve hot with chicken or pork. Makes 1 1/2 cups of sauce, about 8 servings.
Fresh Rhubarb Pie

For 9 inch PIE:
1 1/3-2 cups of sugar, 6 Tbs Flour, 4 cups of cut up Rhubarb, 1 1/3 Tbs Butter
FOR 8 inch PIE:
1 - 1 1/2 cups of sugar, 4 1/2 Tbs of Flour , 3 cups of cut up Rhubarb, 1 Tbs Butter
> Mix sugar, Flour and Rhubarb. Pour into pastry lined pan and dotted with the butter. Cover with top crust. Sprinkle with sugar. Bake at 425 degrees for 40 - 50 minutes until crust is nicely brown and juice begins to bubble through the slits. Serve slightly warm.
Strawberry Rhubarb Pie

Same ingredients as the Fresh Rhubarb pie except substitute Fresh Strawberries for half the Rhubarb used. Use the minimum amount of sugar. Follow the Fresh Rhubarb recipe above.
Blueberry Rhubarb Crumble

2 cups blueberies,2cups Rhubarb, 1 1/2 cupregular rolled oats, 2/3 cup brown sugar, 1/2 cup all purpose Flour, 1/2 cup sugar, 2 Tbs all purpose Flour, Whipped cream In large mixing bowl combine oats, brown sugar, and 1/2 cup Flour. With a firk cut the butter into the oat mixture until it resembles coarse crumbs. reserve 2/3 cup of crumb mixture for topping. Pat remaining mixture into the bottom of a greased 9" by 2" baking pan. Bake in 350 degree oven for 10 - 15 minutes until light brown.
In a large mixing bowl combine the blueberries and Rhubarb. Add the sugar and 2 Tbs flour; toss to coat ingredients. Spoon atop the baked crust. Sprinkle the reserved oat mixture atop the filling. Bake in 350 degree oven 45 - 50 minutes or until golden. Serve warm with whipped cream. Makes 6 servings.
Strawberry Rhubarb Cobbler

Filling:
1 cup sugar, 3 Tbs cornstarch, 1 Tsp ground cinnamon, 1/4 Tsp salt, 1/4 Tsp ground nutmeg, 4 cups Rhubarb, 2 pints fresh strawberries(caps and stems removed) sliced 1/4 inch thick, 1Tbs butter.
Dough:
1 3/4 cups all purpose flour, 2 Tbs sugar, 1 Tbs baking powder, 1/4 Tsp salt, 1/3 cup butter, 1 cup milk.
Topping:
1 Tbs sugar, 1/4 Tsp ground cinnamon
Heat oven to 400 degrees. For filling combine sugar, cornstarch, cinnamon, salt and nutmeg in a large bowl. Add Rhubarb and strawberries; toss to coat. Spoon into 11 by 17 inch glass baking dish. Cut butter into small pieces and sprinkle over the fruit. For dough, combine flour, sugar, baking powder, and salt in medium bowl. Cut in butter with pastry blender or 2 knives until mixture is the size of small peas. Add milk; stir with fork just until dry ingredients are moistened. (Dough will be lumpy) Drop in 8 mounds over fruit. For topping, combine sugar and cinnamon; sprinkle evenly over dough. Bake 30 to 35 minutes until golden brown and filling is bubbly. Cool on wire rack. Serve warm in deep bowls with ice cream.
Almond Rhubarb Pie

In a medium bowl mix sugar, almonds, flour, eggs and vanilla. Stir in Rhubarb. Pour into pie shell. Bake about 40-50 minutes at 375 degrees. Remove from oven and brush warm pie gently with melted jam. Makes 8 servings.
Rhubarb Brunch Cake

1 Package yellow cake mix, including oil, water and eggs specified on the package, 4 cups Rhubarb, 1 cup sugar, 1 pint whipping cream Heat oven to 350 degrees. Grease and flour a 13 inch by 9 inch cake pan. In a large bowl, mix and prepare cake mix according to package directions. Pour into cake pan. Top with Rhubarb. Sprinkle with sugar. Pour cream over top. Bake at 350 degrees for 1 1/4 to 1 1/2 hours, or until toothpick inserted into center comes out clean. Serve warm. store in refrigerator. serves 12.
