Garde Manger - Pork Primals and Their Uses in the Garde Manger Kitchen

The four pork primals have many uses in the Garde Manger kitchen. Ham is an essential deli meat, which can be sliced for sandwiches, diced for soups and salads, or mixed for a spread. The loin can be used much the same way, and seems to be the top choice for producing pates and terrines. After smoking, Picnic Shoulder may be used as an inexpensive substitute for regular ham, as it is a tougher piece of meat which requires more cooking, which has more waste because of its bone structure. Finally, it is the Boston Butt Shoulder which is used to make more sausages then any other type of meat.
