« Garde Manger - Informal and Formal Platter Design »

While not solely reliant on the quality of food presented on a platter, the differences between informal and formal design relate to the level of attention to detail devoted to the later. A formal platter is much more likely to pay attention to factors such as balance, colors, shapes, textures, and flavors.

This is not to say that an informal platter should be considered inferior - All styles have their time and place and should be determined accordingly.
