Penne with Vodka Cream Sauce

2 cups penne pasta
4 teaspoons olive oil
3 shallots -- minced
1/4 cup chicken broth
1 tablespoon tomato paste
1/4 teaspoon crushed red pepper
1/4 cup heavy cream
2 tablespoons vodka
2 tablespoons parsley -- minced
4 teaspoons grated parmesan cheese

Cook the penne according to package directions. Drain and put in a serving bowl.

Meanwhile, heat the oil in a nonstick skillet, then add the shallots. Saute until softened. Stir in the broth, tomato paste, can crushed red pepper. Reduce the heat to low, then add the cream and vodka. Cook, stirring constantly, until heated through; do not boil. Pout the sauce over the penne and toss to coat.

Serve, sprinkled with the parmesan cheese.
