Roasted Basil Chicken

4 garlic cloves -- peeled
1/3 cup basil, fresh -- packed
1/2 teaspoon lemon zest -- grated
1 tablespoon lemon juice -- fresh
2 teaspoons olive oil
4 pounds roasting chicken

Preheat oven to 400. Set a roasting rack inside a roasting pan.

Combine the garlic, basil, lemon zest, and lemon juice in a food processor. With the machine running, drizzle the oil through the feed tube to form a paste. Gently lift the skin from the breast of the chicken and push the paste under the skin, spreading to cover the meat. Set the chicken, breast side up, on the rack, tucking the wings under.

Roast until the meat registers 180. About 1 1/2 - 2 hours.

Let chicken rest and then remove skin and carve.

To freeze, prep the chickens and instead of placing in the over wrap in saran and then foil. Take out to thaw in fridge about 24 hours prior to cooking and then cook as directed. This freezes wonderfully and it's easy to prep 2-3 of them at once.

Also, I stuff the cavity of the chicken with peeled garlic cloves prior to baking because we really like garlic.
