Marsala Shrimp

1/4 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon black pepper
1 pound large shrimp -- peeled and deveined
1 tablespoon olive oil -- divided
4 garlic cloves -- minced
8 ounces mushrooms -- sliced
1 cup plum tomatoes, diced
1/2 cup marsala wine
1/4 cup hot water

Lightly spoon flour into a dry measuring cup; level with a knife. Combine
flour, salt, and pepper in a shallow dish. Dredge shrimp in flour
mixture.

Heat 2 teaspoons oil in a large nonstick skillet over medium-high heat. 
Add shrimp to pan; saute 5 minutes or until golden. Remove shrimp from
pan. Add 1 teaspoon oil to pan. Add garlic and mushrooms, saute 3
minutes. Add tomato; cook 1 minute. Stir in shrimp, wine, and water;
bring to boil. Reduce heat, and simmer 2 minutes or until sauce thickens.

I've increased the garlic because we really like garlic. The
original recipe calls for 2 cloves.

Serve this over pasta, spaghetti squash, or rice.
