English Muffin Strata w/ Canadian Bacon & Cheese

6 English muffin, wheat -- split
3/4 cup canadian bacon -- chopped
1/2 cup Swiss cheese, lowfat -- shredded
2 1/2 cups 1% low-fat milk
1/2 teaspoon dry mustard
1/4 teaspoon salt
1/8 teaspoon black pepper
2 large eggs
2 large egg whites
Cut each muffin half into 6 wedges. Arrange half of muffin wedges in
bottom or an 8-inch square baking dish coated with cooking spray. Top
with bacon. Sprinkle with half of cheese. Arrange remaining muffin
wedges over cheese. Top with remaining cheese.
Combine milk and the remaining ingredients, stirring with a whisk until
blended. Pour milk mixture over muffin mixture. Cover and refrigerate 8
hours or overnight.
Preheat oven to 325.
Uncover strata and bake for 1 hour or until done. Let stand 15 minutes
before serving.
