Cold Spicy Noodles

8 ounces soba noodles
1 teaspoon sesame oil
1 cup bean sprouts
2 medium carrots -- shredded
1 cup cooked chicken -- shredded
1 medium cucumber -- peeled, seeded, and chopped
1/2 cup celery -- finely chopped

Dressing: 
1/4 cup sesame oil
1 tablespoon chili paste -- w/ garlic
1/4 cup light soy sauce
1/4 cup red wine vinegar
1/2 teaspoon salt -- to taste

Drop noodles in boiling water to cover. Cook about 6-8 minutes. Drain,
rinse with cold water and drain again. Toss with 1 teaspoon of sesame oil
and chill.

Plunge bean sprouts into boiling water to cover 1 minutes. Drain. Set
aside.

Place noodles in a large bowl. Add bean sprouts, chicken, cucumber,
carrot, and celery. Mix dressing ingredients in small bowl. Pour over
noodles and toss well.

Serve cold.

NOTES : ~~ 6 ~~

I actually only use 1/2 of the sesame oil, soy sauce, and vinegar
when I make the dressing and this reduces you down to 5.

Definitely add the dressing a bit at a time until you find the
taste you like.

The original recipe calls for angel hair pasta or vermicelli and
does not call for the carrot.
