Blueberry Baked French Toast

1 pound Italian bread -- cut into 1" cubes
8 ounces Neufchatel cheese -- diced
1 cup blueberries
6 eggs
6 egg whites
2 cups 2% low-fat milk
1/3 cup maple syrup
Spray 9x13 pan with baking spray. Place half of the bread cubes in the
pan. Sprinkle cream cheese on top of bread cubes. Top with blueberries
and remaining bread.
In a bowl beat together eggs, egg whites, milk, and syrup. Pour egg
mixture over bread. Cover and refrigerate overnight.
The next morning take our of fridge for 20 minutes and preheat oven to
350. Cover with foil and bake 30 minutes. Remove foil and bake another
30 minutes.
