Quick Shrimp Broil

1 teaspoon extra virgin olive oil
2 garlic cloves -- minced
1 tomato -- coarsely chopped
3/4 pound large shrimp -- peeled and deveined
1/4 cup dry white wine
1/3 cup part skim milk mozzarella cheese -- shredded

Preheat the broiler.

In a medium ovenproof skillet, heat the oil. Add the garlic and cook,
stirring constantly, until lightly browned, about 1 minute.

Add the shrimp and tomato; cook, stirring as needed, until the shrimp turn
pink, 3-5 minutes. Add the wine and cook 1 minute longer.

Sprinkle evenly with the cheese and broil until the cheese is melted and
golden, 2-3 minutes.
