Pork Tenderloin Marsala

1 pound pork tenderloin
1 tablespoon olive oil
1 clove garlic -- minced
1/2 cup marsala wine
1/2 cup dry red wine
2 tablespoons tomato paste
1 pound mushrooms -- sliced
1 tablespoon fresh parsley -- chopped
4 cups cooked noodles
2 tablespoons cornstarch
1/3 cup cold water
Cut tenderloin into 4 equal pieces. Place each piece between 2 sheets of
wax paper, flatten to 1/4" thickness using a meat mallet or rolling pin.
Heat oil in a large skillet over medium heat. Add pork and cook 3 to 4
minutes on each side or until browned. Remove pork and keep warm.
Saute garlic in pan drippings, add wines and tomato paste and stir until
blended. Add mushroom caps, and simmer 3 to 5 minutes. Return pork to
skillet and cook until pork is done.
Combine cornstarch with water and mix until blended. Remove pork to plates
and add cornstarch and water to sauce. Cook until thickened. Place sauce
over noodles and pork. Sprinkle with parsley and serve over hot noodles.
