1 cup part-skim ricotta cheese
1/3 cup part skim milk mozzarella cheese -- shredded
1 plum tomato -- diced
1/4 cup lean ham -- chopped
1/8 teaspoon black pepper
4 fat-free flour tortillas

Preheat oven to 400 degrees.

In a medium bowl, combine the cheeses, tomato, ham and pepper. Divide the
mixture evenly amount the tortillas; roll up and wrap in foil. Place the
foil packets on a baking sheet. Bake until heated through, about 10
minutes. Open the packets carefully, as steam will escape.
