HERE IS ANOTHER NEW CHATTER IN OUR ROOM...HE IS SUPER DUPER COOL...YA'LL NEED TO DROP BY SOMETIME AND MEET HIM...THANKS A BUNCH JIM... One-Skillet Breakfast Serves 8 Ingredients: 1/4 cup Olive Oil, divided 5 cups raw Hash Brown Potatoes 2 cups cooked Ham, cubed 1/2 cup Onion, chopped 1/2 cup Green Bell Pepper, chopped 8 large Eggs, beaten Salt and Black Pepper to taste Warm two tablespoons of oil in a large, deep heavy skillet over medium-high heat. Reduce the heat to medium, and sauté the hash brown potatoes, ham, onion, and green pepper for about 10 to 15 minutes, or until golden brown, turning the mixture frequently as it cooks. Remove the golden mixture from the skillet, and add the remaining two tablespoons of olive oil to warm. Return the potatoes and ham to the skillet and add the eggs. Stir the mixture as it cooks until the eggs are set, much as you would prepare scrambled eggs. Season with salt and pepper and serve warm with biscuits/toast
