1 envelope of unflavored gelatin.....1/4 cup cold water....3/4 cup of sugar......1/4 cup corn startch......1.d teaspoon salt....2-3/4 cups of milk....4 egg yolks beaten......2 tablespoons butter....1 tablespoon vanilla....4 medium firm bananas...1 cup heavy cream whipped....1 baked pastry shell...juice and grated peel of one lemon....1/2 cup apple jelly*************SOFTEN GELATIN IN COLD WATER AND SET ASIDE..IN A SAUCE PAN COMBINE SUGAR..CORNSTARCH AND SALT...BLEND IN MILK AND EGG YOLKS...COOK OVER LOW HEAT STIRRING CONSTANTLY UNTIL THICK AND BUBBLY....REMOVE FROM HEAT STIR IN SOFTENED GELATIN UNTIL DISSOLVED...STIR IN BUTTER AND VANILLA...COVER THE TOP WITH PLASTIC WRAP AND CHILL UNTIL NO LONGER WARM..SLICE 3 BANANAS FOLD INTO CUSTARD WITH WHIPPED CREAM...SPOON INTO PIE SHELL CHILL UNTIL SET.ABOUT 4 HOURS....JUST BEFORE SERVING POUR LEMON JUICE INTO A SMALL BOWL AND SLICE THE LAST BANANA INTO THE JUICE...MELT JELLY IN A SAUCE PAN OVER LOW HEAT...REMOVE BANANA SLICES FROM LEMON JUICE PAT DRY AND ARRANGE ON TOP OF PIE...BRUSH BANANAS WITH JELLY AND SPRINKLE WITH GRATED LEMON PEEL.....MMMM MMMM GOOD!!!!!!!!!!!!!!!
