OK....OK...YEAH I KNOW LATE WITH THESE LAST FEW BUT THATS OUR ANGIE!!!!!!LOVE YA G/F THANKS************* Beef Enchiladas 1 Dozen flour tortillas 1 can enchilada sauce 1 can crushed, peeled tomatoes 2 lbs ground beef 1 pkg shredded cheddar cheese 1 pkg taco seasoning mix (I use Taco Bell for extra spice) 1 container sour cream 1 onion; chopped Fry hamburger and strain off excess grease, add taco seasoning mix per package directions. Whisk together crushed tomatoes and enchilada sauce in a separate bowl.In each tortilla, place a small amount of the sauce mixture, onion, cheese and sour cream. Roll up and place in glass baking dish. Reapeat with remaining tortillas. Pour any left over sauce on top of enchiladas, sprinkle with cheese and bake @ 325-350 for 30 minutes. I like this recipe because it is very versatile, you may substitute any of the items, ie. onions, sour cream etc, for items of your choice, such as black olives or green chilies.
