Pork Medaillons with Fresh Fruit INGREDIENTS 2 lbs. pork tenderloin 1 cup flour 3/4 tsp. salt 1/2 tsp. freshly ground pepper 1/3 cup oil 1/2 cup Madeira Wine 2 cup fresh pineapple chunks 4 med nectarines, unpeeled and sliced 2 kiwifruit, peeled and thinly sliced 1 ( 10 oz.) pkg mixed salad greens DIRECTIONS Cut pork into 1 inch thick slices, place between two sheets of heavy-duty plastic wrap. Flatten to 1/2 inch thickness using a meat mallet or rolling pin. Combine flour, salt, and pepper, dredge pork in flour mixture. Heat 2 Tlb. oil in a large skillet over med high heat, cook pork in batches 2 to 3 min on each side or until pork is done, reserving drippings in skillet, keep pork warm. Stir wine into reserved drippings, loosening browned particles in skillet. Add pineapple and nectarine, cook, stirring gently, 2 min or until thoroly heated. Remove from heat, and gently stir in kiwifruit. Place greens on individual serving plates, top with pork and fruit sauce. Makes 6 to 8 servings.
