Wisdom From The Goddesses
Life's Lessons Learned
When it is 94 degrees out and the humidity is 90 percent, it's not a good idea to try to play 18 holes of golf. Had ice pack on my head and under my arm pits, on the back of my neck and still got nauseous after 15 holes! That's Mississippi!

CHOCOLATE SOOTHES THE WEARY SOUL!
MISSISSIPPI MUD CAKE!
Makes 15 servings: Prep 15 min.: Bake 40 min.
1cup chopped pecans 1/2 cup unsweetened cocoa
1cup butter 4 large eggs
1 (4 ounce)semisweet 1 teaspoon vanilla extract
chocolate baking bar 3/4 teaspoon salt
chopped 1 (10.5 ounce)bag
2 cups sugar 1 (10.5 ounce)bag
1 1/2 cups all-purpose flour miniature marshmallows
Chocolate Frosting (see recipe below)
Place pecans in a single layer on a baking sheet.
Bake at 350 degrees for 8 to 10 minutes or until toasted.
Microwave 1 cup butter and semisweet chocolate in a large microwave-safe glass bowl at
High for 1 minute or until melted and smooth, stirring every 30 seconds.
Whisk sugar and next 5 ingredients into chocolate mixture.
Pour batter into a greased 15x10x1-inch jelly-roll pan.
Bake at 350 degrees for 20 minutes. Remove from the oven and sprinkle evenly with miniature marshmallows.
Drizzle warm cake with Chocolate Frosting and sprinkle with toasted pecans.

CHOCOLATE FROSTING

1/2 cup butter

1/3 cup unsweetened cocoa

1/3 cup milk

1 (16 ounce ) package powdered sugar

1 teaspoon vanilla extract

Stir together first 3 ingredients in a medium saucepan over medium heat until butter is melted. Cook, stirring constantly, 2 minutes or

until slightly thickened. Remove from heat and beat in powdered sugar and vanilla at medium speed with and electric mixer. Beat until

smooth.

Have High Cholesterol?
