Pugliese bread recipe

Pugliese is an Italian bread with a texture similar to an English muffin. The bread is quite easy to make. In the evening mix up a starter dough. 2 1/2 cups flour, 1/4-1/2 teaspoon rapid yeast, and 1 1/2 cups warm water in a bowl. Stir the mixture about 1 minute, cover with a towel and set it aside over night. In the morning it will be be bubbly and risen.

In a large mixing bowl place 2 1/4 cups flour, add 1 1/2 teaspoons salt and 1 1/4 cups water. If you have a dough hook mixer use it, or if stronger use a wooden spoon to mix for 1 minute. Now pour in the starter, scrape the bowl, because it is quite sticky. Now mix it all together for 5 minutes. Cover the dough with a towel and wait for it to triple in size. I put it in my old oven with a pilot light.

Now is the fun part? Grease a bread pan and pour the sticky dough into it. Place the bread pan into a pre heated oven at 400 degrees. As it starts to harden slash the top to allow it to stretch. After 25 minutes check it with a knife. If the knife comes out clean it is done. My oven usually takes another 10 minutes.
