Pork Souvlakia

Pork is not as common as Lamb in the Greek diet, but it is so good
in this recipe that I have cheated again.  But then, that is the point
behind an enjoyable time in the kitchen.  Few rules, few catagories
that cannot be violated.

  • 1 pound pork
  • 1 yellow onion
  • 2 green peppers, cleaned
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • ½ tablespoon light soy sauce
  • ½ teaspoon oregano
  • Salt and pepper to taste
  • Cut the pork into 1/2-inch cubes.  Cut yellow onion and green
    peppers into 1-inch square pieces.  Marinate the meat and vegatables
    in the olive oil, lemon juice, soy sauce, oregano, salt, and pepper for
    about 2 hours.  Then alternate vegetables and meat on skewers.
    Broil until lightly browned, about 15 minutes.
        Serve with Tzatziki, crusty bread, and perhapse an
    eggplant salad, Melitzanosalata.  Dry red wine completes your Greek
    feast.
