
This is another recipie from Onatah. And thanks again!
4 slices bacon (diced). You can also use something such as bac-os
4 half boneless, skinless chicken breasts
1 can Italian-style chopped tomatoes
6 medium pitted, black olives, cut into quarters
2 large cloves of garlic, minced or 1/4 tsp of garlic powder
--> In a large skillet, cook bcaon over a medium heat for two minutes then remove it from the skillet and it is optional (see below) to save the drippings.
--> Flatten chicken slightly and place it into either the bacon drippings or in some oil.
--> Cook for 6 minutes on each side or until no longer pink in center but crisp.
--> Drain most of excess oil but save a little to keep it from sticking.
--> Add tomatoes, garlic, olives, and bacon/bac-os to chicken in skillet.
--> Cook uncovered for about 5 minutes or until slightly thickened.
