- 4 one-pound flounders, heads off, cleaned, & salted to taste
- 1 1/2 sticks (3/4 cup) butter
- 1 bunch green onions, finely chopped
- 1 rib celery, finely chopped
- 1/2 cup finely chopped onion
- 2 Tbsp minced parsley
- 1 tsp salt
- 1/2 tsp garlic powder
- 1/8 tsp black pepper
- 1/8 tsp cayenne pepper
- 1 cup (1/2 lb) white lump crabmeat
- 2 cups bread crumbs
- 1/2 cup dry white wine (or water with 1 teaspoon lemon juice)
- Sauté green onions, celery, onion, parsley in melted butter until soft.
- Add crabmeat. Stir and cook over low heat 5 minutes.
- Add bread crumbs, salt and peppers.
- Make long slit in flounder and stuff with the mixture. Place in lightly greased baking dish (stuffing side up).
- Sprinkle with lemon juice and dash of paprika. Dot with additional butter.
- Bake at 350° uncovered, for 30 minutes, or until fish flakes easily.
Can also add 1/2 pound boiled, peeled, deveined, and chopped shrimp when adding the crabmeat.
