My favorite breakfast is a veggie and cheese omelette in my pita. I use a Nordic Ware microwave omelette pan and simply use a whole egg or egg beaters and whatever veggie I want, usually spinach and a bit of onion. Yummy! For a mid-morning snack sometimes I will put yogurt cheese and fruit in a pocket. This adds protein and calcium.
I like protein salads so lunch is an easy meal for me. A stop to the deli is a favorite place for me to get several tasty fillings such as broccoli salad, crab salad, curried chicken salad, etc. When there is time I will make tuna or egg salad at home. I do not find the pocket large enough for my green salad so I have that on the side or else I have a plate of crudites.A very special combo is cranberry relish and turkey breast, tasty! In keeping with the most traditional filling however, try falafel for an anytime meal.
My old vegetarian tendency in me wins out at this meal. Hummus is my first choice with cheese and roasted red peppers a close second. Also any veggie patty is great with all the fixins. If I am tired or lazy I will have PBJ and banana.
Just plain or topped or dipped is a possiblity for snacks! For a really delicious dip try baba ganoush or tzatziki. Pita chips seem to be an opportunity to cheat when the urge strikes, hee hee!
