Mung Bean Sprouts with Shrimps

Mung bean sprouts is very expensive here in Kuwait, few months ago we decided to buy mung beans so that we can make our own sprouts at home, we know it is very easy to make but we wonder why the sprouts didn't grow well. After few days, we made again, nothing good happen, the sprouts were too short. After one month, we tried again, the sprouts were too thin! LOL :) We don't really know why we cannot make it when the fact was we always did it way back home in Phil. perfectly, it might be because of the quality of the beans or whatever factors that we didn't know until now. So we have no choice but to buy it in the market!



Ingredients:
3 cups mung bean sprouts
1 cup shrimps, peeled
1 medium onion, sliced
2 tbsp. grated ginger
1 tbsp. fish sauce
few strips of red capsicum
1 stalk green onion, cut into 1 inch length
1/2 cup broth
1/2 tsp. sugar
2 tbsp. cooking oil

Directions:
1. Saute onion and ginger in hot oil for few seconds, add shrimps, capsicum and fish sauce. Stir for a minute.
2. Add sprouts, broth, sugar, salt and pepper. Cook until you met your desired donness of the sprouts, (some people like it to be crispy, other may like it soggy) I cooked it for not more than 2 minutes only.
3. Add the green onions, stir for few seconds, turn off heat and serve immediately.

Seafoods Fried Rice

Being a seafoods and fried rice lover, this recipe became one of my favorites. It's a nice combination.



Ingredients:
3 cups cooked cold rice
2/3 cup cooked clams meat
2/3 cup shrimps
1 cup fried squid rings
1 medium carrot, sliced into small cubes
1 medium onion, sliced thinly
3 cloves garlic, crushed
1 tbsp. light soy sauce
3 tbsp. oyster sauce
1 egg, beaten
? tsp. sugar
Salt and pepper to taste
3 tbsp. cooking oil
1 stalk green onion, chopped

Directions:
1. Heat oil in a wok, saute garlic and onion for few seconds, add the shrimps, clams, carrot cubes and light soy sauce, stir fry until the shrimps are done.
2. Add rice, stir and cook for 4-5 minutes, add the oyster sauce, sugar, salt and pepper. Mix well.
3. Stir in the beaten egg, blend well with the rice mixture and cook for 2 minutes.
4. Turn off the heat and add the chopped green onions, mix well.
5. Serve with fried squidrings on top.

Fried Squid with Oyster Sauce

This is one of my family's favorite way to cook medium squids, my father likes it to be crispy-fried and now that I am married, I discovered that my hubby likes it to be cooked that way too. At first I found it difficult for me to fry it( I hate frying) since it bursted out, then few years ago I finally learned how to fry it safely, I simply covered the skillet! LOL :)



My family's tradition of frying it was stuffing the squids belly with pounded ginger and onions with a little amount of pepper, set it aside for few minutes, then fried it in hot oil over low-medium heat until crispy. We served it with our individual's favorite dipping sauce, I like to dip it into the mixture of soy sauce and lemon juice with chili.

That was how I made it also last night, the only addition was the oyster sauce and the capsicums. After I crispy-fried the whole squids, I sliced it into rings. Then I sauteed a few slices of onions in hot oil for few seconds, stirred in the slices of red and green capsicums together with the oyster sauce and few amount of black pepper powder. When the capsicums were almost tender, I put off the heat and added the slices of fried squids on it. There's no need for dipping sauce if it will be cooked this way since the oyster sauce were already blended well with the squids. That's it.

Crab Curry 2

The first crab curry that I made was a product of my experimentation, it was cooked like the Chicken Curry and it was a little bit soupy but this one is different, I used little amount of coconut milk only to cook and moistened the crabs, I also added beaten egg which turned lumpy with the coconut milk and the crabs juice. So yummy.



Ingredients:
3 pcs. medium crabs
3/4 cup coconut milk
1 egg, beaten
1 tbsp. curry paste
1 medium onion, sliced
1 ripe tomato, sliced thinly
2 tbsp. grated ginger
1 tsp. chopped red chili (optional)
1/2 tsp. sugar
salt to taste
1 stalk green onion, cut into 1 inch length
3 tbsp. cooking oil

Directions:
1. Cleaned the crabs, open the shell of each and cut it into 4 pieces.
2. Heat oil in a pot, saute onions, ginger and tomatoes for 1 minute. Add the crabs and curry paste and stir fry until the crabs' color turns into red-orange.
3. Add the coconut milk,sugar,red chili and salt, cook for 5 minutes or until the crabs are done.
4. Add the beaten egg, stir to mix with the ingredients well. Cook until the egg and coconut milk turns lumpy. Stir in the chopped green onions. Cook for few seconds, turn off heat and serve.

Clams Soup

Clams soup is one of our favorite seafood soup especially when cooked while still fresh and alive. It is very rich with flavors that even you just cook it without any spices, the taste will still be very yummy. When I cooked clams soup, I just simply boil enough water in a cooking pot, put some ginger strips on it, some slices of lemon grass, few slices of onions, a ripe tomato slices and few amount of salt, when it is boiled, I add the clams on it, the clams will open after few seconds or a minute, this means that they are cooked already. Garnishing it with few slices of green onions is also great. Pepper can also be added if desired. Yummy!
