We've all got stuff we wish we had then don't. For track bikes I wish I had a lugged Cinelli trackbike... and a classic old school Campy parts kit to go with it. Complete with a white leather saddle. Realistically, I'd settle for a lugged fork for my Fuji track...
As far as others go, a classic fixed gear set up would be nice... such as this Raysport built up with campy road parts. Swee--eet! 
Gear is more complicated... I wish I had a Wool jersey in the classic style of the old days -- since i never got to wear one then, I was like 4 -- but they are expensive, though still under a hun'red bucks (big whoop). Until i found one for like ten beans at a vender when i rode to Somerville NJ to watch the Tour of Somerville bike race. Cool. One wish down. I want a headlight that'll blind drivers and light up the road like a runway... but such lights, though they do exist, cost several hundred dollars.
For messenger bags I got a few wishes already, namely finding a hard-to-find Freight Baggage in safety orange, and a ReLoad... also a chrome which is real neat. The Freight cost less than any of the others retail for by a whole lot and yet it's probably my fav. Go figure...

Stems and bars... Shoot, I already have the best bars round, Somas and Nitto tracks. Cool. As far as stems... Nitto track stems look swell... but not for 80 bucks and the wear on my back! I'll take a 110-ish Nitto road stem if you have one, please. I put one on my Bianchi roadbike and the other on 'nother frame so I'm rocking this crappy no name stem on my Fuji track and it's feeling sad...
Saddles: The white leather ones with the rivets. You old skoolers know what I mean. Or a second Brown Turbo. My flight is on a bike already the Turrrrbo I have now needs a twin so it can stop hopping from bike to bike, that thing gets around more than a ten dollar hooker.
Clothes... well, not much I'd want except one of those traditional-style Jersey's. You know, a stripe across the middle, like in the "olde days". Cannondale came out with a "classic" line of Jerseys doe '08. 
Cool. That goes on the list...
Backpack: A roll top chrome backpack would be cool. I have a Chrome backpack already but a lighter one would be cool, I wish they made such a thing. Oh they do -- Camelback makes a backpack called the HOSS (which also has a hydration unit) that has a roll top waterresistant main compartment. Finally a regular backpack that works like a messenge rbag or backpack... Yeh but it's expensive. Very expensive.
Chain: dude, a wipperman. I mean they're only like a hundred bucks. For an f-ing chain.
Yeh, right.
