2 tablespoons olive oil
1 1/2 teaspoons cracked black pepper
2 cloves garlic, pressed
1/2 teaspoon each, salt and thyme
4 medium potatoes, sliced into 1/4-inch-thick rounds
4 lime wedges
Combine oil, pepper, garlic and thyme. Brush over steaks to coat both sides. Brush potato slices with additional oil; season to taste with salt and pepper. Lightly oil grid. Place steaks in center of grill, with potatoes around edges. Cook, covered, over medium-hot grill about 5-6 minutes on each side for medium-rare steaks, or to desired doneness. Potatoes should be cooked 5-6 minutes per side, or until golden brown and tender. Serve wedges of lime to squeeze over steaks.
