Beef and Rice Skillet

(serves 4 approx.)

1 lb ground beef
2 tbsp margarine
1 ½ tsp salt
1 tsp pepper (or to taste)
1 medium onion
½ medium green pepper
1 1/3 cup instant rice
28 oz. Tomatoes (canned)
½ tbsp yellow mustard

Lightly brown the ground beef in margarine in
a large skillet.
Season with 1 tsp salt and the pepper.
Meanwhile, thinly slice onion, green pepper,
and add it to the skillet.
Stir in the instant rice. Sautee over high
heat until the rice is lightly browned.
Add the tomatoes, mustard, and the remaining
salt. Ready to serve.
