Pumpkin Bars


    1 c. oil
    2 c. white sugar
    2 c. cooked pumpkin (canned)
    4 eggs
    2 c. flour
    2 tsp. baking powder
    1 tsp. baking soda
    1/2 tsp. salt
    2 tsp. cinnamon

    Beat eggs, add sugar, oil and pumpkin.  Stir dry ingredients together well.
    Stir into wet ingredients.

    Spread into a well greased jelly roll pan.  Bake 20-25 min. at 350 deg.
    Until test done with a wooden toothpick.
    Frost with Cream Cheese Frosting while still slightly warm.

    Cream Cheese Frosting:

    3 oz. cream cheese, room temp.
    6 tbsp. margarine
    1 1/2 c. powdered sugar
    1 tsp. vanilla
    1 tsp. milk (or more)
    Mix together well.  Add milk, small amounts at a time, until of
    spreading consistency.  Frost bars while still slightly warm.
    These freeze well.
