Artichoke Hearts


    2 cans (3 Kilo  -about 7 lbs.) 1/4 cut salad artichokes

    Arrange in 2 steam table pans.

    Heat:
    1 c. lemon juice
    2 Tbsp. salt
    2 tsp. oregano
    3 tsp. grated lemon rind
    1 1/2 c. minced onion
    1/2 tsp. garlic powder
    1 1/2 sticks oleo
    2 small cans chicken broth

    Pour seasonings over artichokes and let heat on steam
    table. Just before serving, sprinkle coarse chopped pecans
    over hearts.  Serves 50.
    (nuts optional, beware of people with nut allergies)
