Squash Casserole

    3 (No. 10) cans squash, well drained
    1 lb. margaine,  melted
    1 lb. chopped onion
    1/2 to 1 c. chopped red pepper
    3 Tbsp. salt
    1 lb. grated sharp cheese (set aside 1/2 for topping)
    1 doz. eggs, beaten
    4 c. mayonnaise
    1 Tbsp. pepper
    1 lb. box ritz crackers

    Mix all ingredients well. Break up any large chunks of
    squash. Put in 3 steam table pans that have been greased. Cover with
    Ritz crackers crushed and mixed with reserved cheese.
    Bake at 350 degrees for 1 hour until browned.
