1c mayo or salad dressing
1/3 c chili sauce
1/4 c lemon juice
2 tsp. sugar
1 large tomato chopped, seeded
1/4 c sliced green onions
8 oz. of elbow macaroni, cooked
4 c thinly sliced lettuce
8 slices bacon, cooked and crumbled
Make sauce with first 4 ingredients. Stir in
mac, tomato, and onions.
Cover; chill. Stir in lettuce and bacon before serving.
|NOTE: I would highly recommend the BLT Pasta Salad. I served it at a lunch for 60 this past weekend and people loved it. I did change the pasta to wagon wheels instead of the elbows. I increased the pasta to Three pounds, doubled the dressing and mixed it in, and made one recipe of the dressing to moisten the salad just before serving. If you do make this salad I would suggest green leaf lettuce, it looks so much nicer than iceberg. Doug|
