Bean & Sausage Soup


          11 lb.  white navy beans
    30 lb. potatoes
    18 med. onions
     6 pkgs. sausage (your choice)
    1 box bay leaves
     

    This recipe is designed for big electric roasters.  You will need 3 of them.  Many Church Groups
    have these roasters. Soak beans overnight and then cook at 300 degrees for approximately 2 hours.
    Add potatoes and sausage and then cook on 350 degrees until done.  You need 3 roasters with
    the following in each: 6 chopped onions 9 3/4  lb. potatoes 6 bay leaves 2 pkgs. sausage, cut
    into slices. Salt and pepper to taste. Skim off any excess fat.

    This will feed approximately 90 people.
