1 pound cottage cheese
1 cup pineapple pieces in natural juice
1 envelope gelatin
5 packs artificial sweetener
1 teaspoon vanilla extract
1 teaspoon lemon juice
Preheat oven to 350 degrees. Spray 9 inch pie pan with nonstick
Put cheese and other ingredients into blender; blend until smooth.
Pour into 9 inch pie plate. Sprinkle top with the cinnamon.
Bake for 30 minutes. Cool and refrigerate - Serves 8

This recipe is without a crust. If you add a crust, you would
have to add
the food values. Ideally, you could use any crushed non-sweetened cereal
with some melted butter mixed in and press into pie pan to form a thin crust.
