I love strawberries! I collect anything that has anything to do with a strawberry! I grow strawberries in my garden and I love it when it is time to pick, even though it is a back breaking chore. I mainly use the strawberries that I pick to make my own jam and jelly. I will share with you my recipe that has not failed me all the years I have made it.
4 cups of crushed strawberries or 4 cups of juice
1 box of certo
4 cups of sugar
In a large pot filled with your berries or juice add one box of Certo crystals. Bring to a boil and then add sugar. Bring to a full rolling boil for one minute. Remove from heat and stir the mixture down. Pour into sterilized jelly jars and screw the lids down tight. There you have it, you will never buy jam or jelly again!!
Of course there are many ways to eat strawberries and FRESH IS THE BEST, but where I live FRESH isn't always available so I do the next best thing, freeze or make jelly.
PS: I use this recipe to make all of my jams and jellies as I don't like it too sweet and I have very good results.
