CRANBERRY RELISH     I# cranberries- washed and picked of stems and then drained !/2 cup -light brown sugar     1 can lite or lo/cal apricots packed in own juice--- chopped Bring fruit and sugar to a boil and cook for 2-3 minutes, stirring often Add cranberries and stir to mix. Cover, with lid to pan cocked, on edge of pan. cook on med. heat for 10-12 minutes till berries begin to pop. Stirring often Remove from heat and keep stirring helping the berries to break down. Cool and serve/------------Makes about 3 cups Serving size- 3 Tablespoons and calories count =45 per serving Barb--Subject: Italian-Style Breakfast Sandwich Italian-Style Breakfast Sandwich Serves 1 2 slices Large Italian bread 1 ounce Prosciutto ham, thinly sliced 1 Egg, poached 1 slice Mozzarella cheese Lightly toast the bread. Top with the prosciutto. Add the egg. Finish with the cheese. Place under the broiler until the cheese melts. Top with the other slice of bread. Serve with a knife and fork. - Nick Sundberg Subject: Prego Pasta Bake Recipe Ingredients :: 1 pkg (16 oz.) uncooked Rotini Pasta 1 jar Prego Pasta Bake Sauce 1 full jar water (3 1/2 cups) 2 cups (8 oz.) shredded mozarella cheese Directions :: Preheat oven to 425° Place uncooked pasta in 13" x 9" baking dish Stir in Prego Pasta Bake Sauce and water-Cover tightly with foil. Bake 30 minutes. Uncover--stir, top with cheese. Bake uncovered-10 minutes, or until pasta is tender. Let rest out of oven for at least 10-20 minutes. Serves 4-6. Note: we are going to try using our own 'spaghetti sauce'
