            Among the fiber rich food are fruits and vegetables, legume, beans, nuts and whole grains. It’s got to be whole grains, say whole wheat or whole rye, and for rice, it has to be unpolished rice. Nutritional/ molecular oncologist Dr. Romulo de Villa’s recommendation on the desirability of unpolished over polished rice has a simple rationale. Would you believe that even the onset of diabetes could be averted with the healthy habit of eating unpolished rice? This expert, who is a professor of nutrition and biochemistry (and a consultant of biotechnology and molecular biology) has a very logical explanations.

            Rice is largely carbohydrate and glucose, unpolished rice is rich in fiber, another nutrient which, although established to be of the not digestible and not absorbable type, is largely beneficial to the body. Eating unpolished rice gives enough fiber that prevents sugars from triggering the pancreas quickly. Deluge of sugars over time could cause damage to the pancreas and lead to diabetes. When you eat unpolished rice, it goes down the digestive tract with its fibrous nature serving to prevent the sudden rush of digestion products into the body. Thus, the pancreas and other organs involved in the digestive system do not get overworked and insulin production of pancreas is kept on pace and not overwhelmed. This applies also to other fiber rich foods like whole grains, among which are rolled oats and whole wheat bread, a wholesome breakfast treat.

            There’s much grain of truth in the saying. “ you are what you eat” and were not here only talking about the fibrous vs non fibrous food, or food cooked in harmful oil vs, food cooked properly. We are also talking of generalities like eating processed vs semi processed or fresh, and of our general choices of food, like, meat vs fish (if meat, of what type) fruits and vegetables or lack of these.
