Blueberry Crisp
Great with a scoop of vanilla ice cream or soy ice cream

Ingredients:
2 lbs. fresh or thawed frozen blueberries
1/4 cup sugar or the equivelent of your favorite sweetener
1/4 cup organic unbleached sugar or brown sugar
1/4 cup flour
1 tablespoon cinnamon
3 tablespoons softened margarine

Preheat oven to 350 degrees. Mix blueberries with 1/4 sugar and pour into a small baking pan or casserole. In a seperate bowl, mix the brown sugar, margarine, flour and cinnamon until mixture is crumbly. Sprinkle over the top of the blueberries. Bake for 20-25 minutes until the juices are bubbling and the crust is browned slightly. Allow to cool for 20 minutes before serving.
