Stuffed Green Peppers 2 medium green peppers -- medium to large 1 pound ground beef 1 small yellow onion -- minced 2 cloves garlic -- minced spices ... anything you like goes olive oil riccotta cheese sour cream pork rinds grated parmesean cheese Preheat oven to 350 spray the bottom of a small shallow roasting pan with some nonstick spray brush a little olive oil all over, inside and out, of each pepper, then put the peppers in the roasting pan and in the oven saute the onions and garlic in the oil until fragrant and transparent. Break up the beef and saute that as well. keep the heat on the "smaller" side. This should cook slowly. Add your spices, cheese and keep mixing around, seasoning, etc. Toward the end, crush up a small bag of pork rinds and add that to the meat mixture. Don't overcook the meat and make sure you cook it slowly. Take the peppers out of the oven after about 45 minutes (they should be very soft. Take a pair of tongs and fill up the peppers with the meat mixture. Fill as much as you can. Sprinkle additional parmesean cheese on top and put back in the oven for five or ten minutes until heated. Serve with a little dollup of riccotta and sour cream.
