REUBEN CASSEROLE Bottom Layer - Large can of sauerkraut - well drained, mixed with as much minced garlic as you wish and 2 cups of sour cream. The sour cream cuts down on the sourness of the sauerkraut. Next Layer - 1 pound shredded deli roast beef or corn beef Next Layer - 2-3 cups shredded swiss cheese Top Layer - Torn up pieces of rye bread. Melt a stick of butter and pour over the top of the bread. Heat in the crock pot until heated through or if using a casserole dish, bake in oven at 350 degrees for 30-40 minutes.
