Mozzarella Sticks 1 pound mozzarella 2 eggs lightly beaten 3/4 cup freshed grated parmesan cheese 1 recipe of sweet tomato sauce (made in advance) or your favorite marinara sauce. Preheat broiler. Slice cheese across width in 1/2" thick slices. Dip each slice into the beaten egg and coat in the parmesan cheese. Put on a plate and freeze until just before cooking. Warm tomato sauce in small sauce pan. Put frozen cheese slices on cookie sheet and place sheet under broiler for 2-3 minutes until cheese bubbles and turns golden brown. Flip each slice over and brown the other side. Top with tomato sauce. Sweet tomato sauce: Makes 2 cups 1 large onion 8 fresh ripe tomatoes 1/4 cup extra virgin olive oil 3 cloves of garlic, minced Chop onion in food processor until finely minced. Coursely chop tomatoes in food processor or blender. Heat med. skillet on med. heat and add olive oil. When oil is hot add minced onion and cook until clear . . . about 4 to 5 minutes. Add garlic and cook for another minute. Add tomatoes and reduce heat. Simmer 45 minutes until sauce thickens a little.
