Garbage Chicken by Naomi B 4-5 lb Whole Chicken 1/2 Carrot 1/2 Stalk Celery 1/4 Bell Pepper 1/4 Onion 1/3 tsp Rosemary 1/3 tsp Thyme 1/4 cup Soy Sauce 1 cup Chicken Broth 2 Tbsp Butter Salt & Pepper to taste Wash & clean chicken. Sprinkle salt, pepper, rosemary and thyme inside chicken. Put 1 Tbsp butter inside chicken. Chop vegetables into large pieces and place inside chicken. Combine broth and soy sauce. Place chicken in pan with sauce. Bake at 350 degrees for 45 minutes. As a gastric bypass patient, I need the chicken to be very tender. I double the broth and soy sauce and cook at 325 degrees, wrapped in a foil tent for several hours or use a slow cooker. I add cooked rice around the edges for the last 15-30 minutes. I recommend basmate rice or Uncle Ben's Wild Rice, but others work as well.
