Cloud Puffs * 3 egg whites, at room temperature * 12 teaspoons of sugar substitute * 1/2 teaspoon cream of tartar * 1 teaspoon vanilla Preheat oven to 200 degrees. Put egg white and cream of tartar in a bowl. Beat with an electric mixer. Add sugar a little at a time, whipping well in between. Add vanilla and continue whipping until whites are very stiff. This may take several minutes. Place heaping spoonfuls of the mixture on a cookie sheet. Bake in a 200 degree oven for 75 minutes. Turn oven off and let cookies sit in oven for 2 more hours. Remove from oven and store cookies in an airtight container.
