Chicken Stir Fry Meal 2 servings 1 TBS vegetable or olive oil 1 chicken breast, halved, with skin and bone removed 1 cup of either Bok Choy or suey choy, torn up and packed 1 cup of sliced fresh mushrooms 1 cup of Broccoli florets, cut small 1 cup of fresh bean sprouts 1 cup of grated carrot 1 Red or Green pepper slivered (optional) 6 oz of frozen or fresh peas with or without pods 3 TBS Water 1/4 cup of Light soy sauce ( 40% less salt) 1/8 tsp ground ginger 1/8 tsp garlic powder 1/4 tsp pepper(black) 1 tsp cornstarch Heat oil in wok or frying pan. Cut chicken into small pieces. Add chicken to pan. Stir-fry until no pink remains. Transfer chicken to bowl. Add all the vegetables to pan and stir-fry for about 3 minutes. Add water. Stir in chicken. Cover and simmer about 7 minutes. Mix remaining ingredients in a small cup. Stir into vegetable mixture. Stir-fry to mix and thicken.
