3-Bean Skillet 1 pound extra lean ground beef (Laura's Lean Beef) Butter-flavored cooking spray 1 can kidney beans, drained and rinsed 1 can black beans, drained and rinsed 1 can hot chili beans, drained and rinsed 1 (15-ounce) can tomato sauce 1 (1 1/4 ounce) package taco seasoning mix 1 (11-ounce) can Mexican-style corn, drained 8 - 10 fat-reduced tortilla chips 1/4 - 1/2 cup reduced-fat cheddar cheese 1/2 cup shredded lettuce 1/4 cup chopped tomato Fat-free sour cream Preparation: Brown ground beef in a non-stick skillet. Drain and rinse the beef to remove extra fat. Spray skillet with cooking spray. Return cooked beef to skillet and stir in drained beans. Add 1 cup of warm water and tomato sauce and sprinkle taco seasoning mix over this mixture. Simmer on medium high heat for 12 - 15 minutes or until most of the liquid is absorbed, stirring often. Stir in corn and continue to heat for 1 - 2 minutes. Just before serving, top with tortilla chips, cheese, lettuce, tomato and a dollop of sour cream. Makes 6 servings.
