Tomato Gravy

One of our most highly esteemed family traditions is waking up Christmas morning and being forced to eat breakfast before we can open gifts. EVERY Christmas, we have biscuits and tomato gravy. It's also a great Saturday morning breakfast. However, I have come to notice that this is, evidently, known only to my family. Most other people have never had tomato gravy, and when I mention it, their minds immediately picture ketchup (which is *so* not true). SO in an effort to pass on the family tradition to other families in America, I'm posting the recipe for tomato gravy. Everybody needs to try it.

1/4 c. oil (or, if you live in the South, bacon grease)
1/4 c. flour
2 c. tomato juice

Heat oil in deep skillet on medium-high until hot. Add flour. Stir until flour and oil are blended and flour begins to brown. Reduce heat. Add tomato juice, stir, and simmer until gravy is smooth and hot. Add more tomato juice if too thick. Salt and pepper to taste.
