Baked Dishes

Over the years my most favouite pastry receipe was the Tenderflake Perfect Pastry.
35 years ago we had given out the receipe at our Tupperware Parties when I sold it.
Later the receipe came out on their box of lard.
So if you have not tried it please do. It has not changed over the years.



REFRIGERATOR PASTRY

Place 1 lb lard in a mixing bowl
cut in pieces and pour 1 cup boiling water over and let stand
Stir until mixed and add 4 cups flour, 1 cup at a time

adding 2 tsp of BP and 1/4 tsp salt.

Cover and place in frig until the next day.
You can use all of it or just a piece of it, for tarts or pies.
When you roll the doe out on the floured board you will know if you need a little more flour to add to it.

This receipe is just great for sausage rolls. All you need to do is take a lb of sausage meat spread it out on the rolled doe, roll it up and pinch the ends and bake as usuall. These sell great at bake sales.
Make small ones and serve as odourves,



HAWAIAN CARROT CAKE

3 eggs beaten
1/2 tsp nutmeg
1/2 tsp salt
2 tsp cinnamon
1 1/2 cup sugar
3/4 cup miracle whip
1 14 oz can crushed pinapple
2 1/2 cups shredded carrots
3/4 cups chopped walnuts
2 cups flour
2 tsps baking soda
Bake at 350 for 1 hour untill done
Frost with Cream Chease frosting


MARIE'S APPLE CAKE

Mix in a bowl 3 tbs. margarine
1 cup sugar
1 egg
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp B.S.
1 cup flour
2 cup diced apples
1 tsp vanilla
1/4 cup walnuts or raisons or both

Pour in greased and floured 8 " cake pan. Double this receipe if you want a 9 x 16" pan. Bake at 350.

Another favouite at our Pot Luck suppers.



DELISIOUS MEAT PIE

In a bowl mix 5 cups all purpose flour
2 tsp salt
1 tsp Baking Powder
3 tbsp Brown sugar

To this mixture add 1 lb lard, cut in until pea size.

In a 1 cup measuring cup beat with fork 1 egg
2 tsp vinegar and add enough cold water to make 1 cup
Work this mixture up and divide into 4 equal parts
Each part is sufficient for a 2 crust pie.
Wrap in plastic and store in refrig for 1 or 2 weeks. Store in freezer to have a continuing supply.

FILLING FOR INDIVIDUAL MEAT PIES

In a frying pan sautee 1 chopped onion and 1 drained can of mushrooms with a little oil
Add one lb lean hamburg and fry until cooked turning often and cutting it up. When cooked drain off excess fat
Add 1 cup frozen peas
Make a gravy by adding about 1 1/2 cups of water to pan and 1 tsp Kitchen Bouquet Browning and seasoning sauce,
1 tsp flour to thicken and S&P.
Make sure there is lots of gravy so that the pie is not to dry.

Roll out the doe on a floured board and cut into size for pies, depending on what size of foil dishes you use.
After putting the bottom crust in pans, spoon mixture into pie and add a top crust.
flut the edges and prick with fork.
Using pastry brush spread a little milk over top and a little sugar.
Bake at 400 until crust is brown.
These can be frozen in plastic containers and brought out when needed.
These are great to have on hand when unexpected relatives come in.



SUNSHINE CAKE

1 1/2 CUPS EGG WHITES OR 10-12 EGG WHITES

1 CUP SIFTED CAKE FLOUR

1 1/2 CUPS SUGAR

2 TSP. VANILLA

1/2 TSP. CREAM OF TARTER

4 EGG YOLKS

1 RECEIPE LEMON TOPPING (BELOW)

FRESH RASPBERRIES

1. IN A LARGE BOWL,LET EGGS STAND AT ROOM TEMPERATURE FOR 30 MIN. MEANWHILE SIFT CAKE FLOUR AND 3/4 CUP OF THE SUGAR TOGETHER 3 X.

2. PREHEAT OVEN TO 375 F..ADD VANILLA AND CREAM OF TARTER TO EGG WHITES;

BEAT WITH AN ELETRIC BEATER ON MEDUIM TO HIGH SPEED UNTIL SOFT PEAKS FORM(TIPS CURL)..

GRADUALLY ADD THE REMAINING 3/4 CUP SUGAR, BEATING UNTIL STIFF PEAKS FORM(TIPS STAND STRAIGHT)..

.SIFT ABOUT ONE-FOURTH OF THE FLOUR MIXTURE OVER EGG WHITE MIXTURE,,FOLD IN GENTLY...

REPEAT SIFTING AND FOLDING WITH REMAINING FLOUR MIXTURE EACH TIME...

TRANSFER HALF OF THE EGG WHITE MIXTURE TO ANOTHER BOWL, SET ASIDE 3. IN A MEDUIM BOWL,BEAT EGG YOLKS WITH AN ELETRIC MIXER ON HIGH SPEED ABOUT 5 MIN. OR UNTIL THICK AND LEMON COLOUR...

FOLD YOLK MIXTURE INTO ONE PORTION OF THE EGG WHITE MIXTURE

ALTERNATELY SPOON YELLOW AND WHITE BATTERS INTO A UNGREASED 10 INCH TUBE PAN

USING A KNIFE OR NARROW METAL SPATULA CUT THROUGH THE BATTER..

4. PLACE TUBE PAN ON THE LOWEST OVEN RAKE

BAKE FOR 35- TO 40 MIN.. OR UNTIL CAKE SPRINGS BACK WHEN LIGHTLY TOUCHED NEAR CENTRE...

IMMEDIATLY INVERT THE CAKE IN THE PAN, STANDING THE ENTRE TUBE OVER A TALL-NECK BOTTLE..COOL THOURGHLY

5. LOOSEN CAKE FROM PAN, REMOVE CAKE..FROST WITH LEMON TOPPING IF DESIRED

GARNISH WITH RASPBERRIES AND ORANDE OR LEMON STRIPS

STORE FROSTED CAKE IN FRIDGE FOR UP TO 24 HOURS...MAKES 16 SERVINGS

LEMON TOPPING; THAW ONE 12 OUNCE CONTAINER FROZEN LIGHT WHIPPED DESSERT TOPPIN

FOLD IN 1 TSP. FINELY SHREDDED LEMON PEEL AND 2 TABLESPOON LOMON JUICE

PER SERVING 169 CALORIES 4 G. TOTAL FAT CARB CHOICES 2
