- 2 to 3 lbs frying chicken pieces -
breast, legs or both
- 2 cups prepared buttermilk pancake
- 2 to 3 cups coarse bread crumbs - I
make my own in a blender or food
- 1 tsp. seasoning mix - Morton's
Nature's Seasons or similar
- 1/2 tsp. paprika
Prepared pancake mix and set aside.
Combine bread crumbs & seasonings. Dip chicken in pancake batter
Dip lightly battered chicken in bread crumb/seasoning mixture.
Fry chicken pieces, a few at a time,
