Tropical Pineapple Cake
2 cups sugar
1/2 tsp. salt
2 tsp. baking soda
1 tsp. vanilla
2 cups flour
1 can crushed pinapple with juice - 20 oz.(do not drain)
Mix the eggs and sugar together and blend well; add the remaining
ingredients. Beat at medium speed with an electric mixer for about 2 minutes.
Pour the batter into a greased and floured 9" x 13" cake pan. Bake in a preheated oven at 350º for 35 minutes. Cool in the pan on a wire rack.
1 pkg (8 oz.) cream cheese
1/4 cup butter or margerine
1/2 tsp. vanilla
2 cups confectioner's sugar
Mix all the ingredients together and beat hard. Spread on the cooled pineapple cake.
