Tropical Pineapple Cake

cake:
  • 2 eggs
  • 2 cups sugar
  • 1/2 tsp. salt
  • 2 tsp. baking soda
  • 1 tsp. vanilla
  • 2 cups flour
  • 1 can crushed pinapple with juice - 20 oz.(do not drain)

    Preparation -
    Mix the eggs and sugar together and blend well; add the remaining ingredients. Beat at medium speed with an electric mixer for about 2 minutes. Pour the batter into a greased and floured 9" x 13" cake pan. Bake in a preheated oven at 350 for 35 minutes. Cool in the pan on a wire rack.


    frosting:

  • 1 pkg (8 oz.) cream cheese
  • 1/4 cup butter or margerine
  • 1/2 tsp. vanilla
  • 2 cups confectioner's sugar

    Preparation -
    Mix all the ingredients together and beat hard. Spread on the cooled pineapple cake.
