Blueberry Muffins

  • 1-1/2 cups flour
  • 1/2 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 cup vegetable oil
  • 1/2 cup milk
  • 1 egg - beaten
  • 1 cup fresh blueberries

Preparation -
Combine the dry ingredients and set aside. In a separate bowl, combine the oil, milk & egg. Stir into the dry ingredients. Mix by hand until all the dry ingredients are moistentened. Fold in the blueberries. Fill paper baking cups 2/3 full. Bake in a preheated oven at 375 for 20 minutes or until lightly browned. Makes 12 average size muffins or 24 mini-muffins.
